Homemade Baked Fries

I stopped eating fast food when I got sick, but I still crave it like an addict.  

This is a great alternative that makes me feel like I'm getting away with something.  I now prefer these to greasy fast food fries. 

*gasp*



Serving size: 2 people
Time: 10 mins prep & 25 mins to cook.

2 potatoes
2 Carrots (or a few baby carrots)
1 tbsp Butter or olive oil
Oregano
Parsley
Salt

Preheat oven to 400 degrees (I use my toaster oven).
1. Melt butter
2. Wash and peel the potatoes.
3. Cut in half then cut into strips (fries).  Put in a ziplock or bowl
4. Cut the carrot(s) into strips and put in bag or bowl.
5. add the butter (when it's cooled), oregano, parsley, and salt.  Toss the potatoes and carrots around until they're coated.
6. Cover a pan with foil, place coated veggies on pan and bake at 400 degrees for 10-15 minutes or until bottoms begin to brown.
7. Turn them over so they browned side is facing up and continue baking for another 10-15 minutes.

If you're having a movie night or a superbowl party you don't have to skip the nachos or potato skins.  You can take these fries and melt cheddar cheese on top and sprinkle a few bacon bits.  Serve with plain greek yogurt (as a substitute for sour cream!)
